Having the download be structured (Markdown or something else) makes it easier to post-process. Adding a plain text option could be something, but it's easy enough to remove Markdown tags with a couple of RegEx search and replace operations.
And keeping Markdown in the chat download means that when the AI comes back with structured output, such as a Chapter/Scene structure, you don't lose that information.

Going to mark this as "in progress" as we already got a markdown exporter now. We don't have more options right now, so we can mark this as complete when we do.

Just came across the same idea. The other option would be better searching through all the text files.
If I don't have a global search in NC, downloading all the text would be nice, because I then can use Notepad++ to do the searching job.

spaceemotion: Markdown might be best to keep track of USER and ASSISTANT portions. Maybe use WRITER and NOVELCRAFTER for the headings.

spaceemotion: oh please make it txt, as a writer markdown is so annoying to edit/remove, all those **'s etc; sure global find/replace helps ... maybe offer a choice for folk? When I say "edit" I mean in Google Docs and in Vellum (.pub).
